The history


I Inspired by the great wine producers and wines that have laid out the blueprint of winemaking globally, Giovanni, at the age of thirty, decided to transform his dream of producing wine into a reality, and to undertake studies in viticulture and oenology in the city of Bologna, a city in which he had lived and worked for ten years.

The philosophy


For Giovanni wine is art, poetry and emotion. The elements that contribute to the production of wine (the vines, the grapes, the winemaking process etc.) can be likened to musical notes. The elements are the same for everyone, like notes inscribed on sheet music are the same for musicians. Music itself however, is in fact that which lies between the notes; it is the ‘space between’. That is to say, the interpretation of man, his intervention in the process, his idea, his vision, his perception, his style, is what creates wine, and it is this that creates music. It is this that reflects the soul of who has produced it.

The land and Sava


T he signs and traces of Salentinian viticulture’s remote past can be found in Antonio Ferrari’s (1444-1517) own writings, who was also referred to as ‘Galateo’. Whilst referencing the city of Taranto, he wrote that ‘his orchard is where the weather switches between mild winters and long springs, and his vineyards, as luscious and heady as Falerno wine, ferment Aulone wine.

 

The vineyards


The old vineyards, ‘viti ad alberello’ (containing head-trained bush vines), grown on red soil typical of Sava’s agricultural land, are a distance of 12 km from the Ionian Sea. They are located in the areas of Agliano, Quadrata, Meschinella and Tarentini, covering a total area of 2.09 hectares.

The wine


The Primitivo "Vecchie Vigne" Giovanni Ludovico comes from selected grapes and bunches harvested manually.
The vinification is classic and the maturation takes place in French oak barriques.
